Wheel and Tire upgrade help

I am looking to purchase wheels that are 1 inch bigger than my stock 18 but also tires that are 1inch smaller than current stock. I like the overall size but just want smaller profile. Also get very overwhelmed with all the offset talk on websites. Essentially I would like the wheels to stick out 1 more inch. So not sure what offset to look for and or should I get spacers. I looked on forums and found @KodiakEd picture and liked his setup.

0 offset or -12ish will get you close. If your going with a wider wheel, say 9-10 inches, then 0 offset would be better.
